What's the deal with the oxygen sensor? The manual says replace every 30k miles. Is that
necessary? What happens if you don't? Must be pretty important if they put a light on the
dash to remind you.

The O2 sensor, senses the oxygen content in the exhaust, and can tell the car to adjust its fuel to to O2 mixture based on it(the O2 in exhaust content). I beleive this is more of an emissions control item and probly mandated by law, but of cource your car will run it's best w/ all items operating properly. Plenty of people go w/out replacing this sensor but thats just not how a car should be treated.

There's no need to change it every 30K miles. When the light comes on just flip the reset switch and the light will go out, I don't remember where it is exactly but is says in the Haynes Manual.

it all depends on how old and abused the sensor gets, it needs only to be replaced when its not working, the light doesn't tell you that it isn't working as you know, but usually it needs to be replaced at that time.
Just disconnect it and get more power anyway, unless you hug trees or you have to get emmisions test done.

Just replaced mine. Seems to be running a little smoother (response, etc). Thought about not doing this due to cost of replacement o2 sensor. Then I heard about the universal-fit bosch o2 sensor. Less than $20 at my local Autozone. They don't come with the stock connectors. You have to cut and crimp. Everything was supplied. Even heatshrink tubing. Very easy. For that amount of money, why not replace every 30k miles?
