why do some 80 931's have 5 lug wheels and some have 4 lugs? was it just a factory option or a different package?

US market 80 931 cars came with the disc/drum brake standard. four wheel disc brakes were optional, and available as part of the M471 competition package or separately.

81 and 82 US market 931 cars came with the four wheel disc brakes standard.

Euro 931 cars all model years supplied with four wheel disc brakes standard.
