Hey, so I bought the '81 931 in question and it runs well but the turbo is fried. Lots of white smoke at throttle. I have two options. A friend of mine just opted for the big turbo in his 89 944 turbo S so I might be able to get his original S turbo (could I rig that into the 931 by the way?) or I could just rebuild the original one. So my question is what is the best source foe rebuild kits? Any info appreciated.

From what I gather its not an easy job to setup a turbo yourself when its rebuilt. It has to be very carefully balanced as it rotates at several 100,000 rpms. A specialist job for definate (my opinion). Its probably easier to get a recon exchange turbo and fit it yourself, all the hard work has been done for you and its a case of plumbing it in yourself. As far as the 944 unit goes i don't think it can be fitted easily to the 931 as it is watercooled and would therefore need water hose connectors that the 931 doesn't have. It may be possible to modify the 931 water system but i'm not sure.
BTW whils the whole thing is apart check the waste gate also, they can loose the ability to seal effectively and thus lose you some valuable power, it is possible to put a restrictor in-line a temporary measure but its worth having it checked.

If you live in the states Majestic Turbo in Dallas can rebuild it in 1 day for $250. The guy is really nice and helpful.

If the smoke is trully white, your turbo won't be the problem. White smoke indicates coolant getting into the combustion chambers. Usually a head gasket. If the turbo is bad, it will let oil into the intake. Oil smoke is a blueish gray color.

Oil is purple and smells like burnt peanuts, it does not at all in any way smell like bad gas.
Coolant does not smell, it only smells sweet at low temps from my experince, for example just cranking the motor with coolant in cylinders and smelling the exhaust pipe should make white sweet smell come out...but running the car it won't smell. Coolant comes out in great quanitiies and puffs, if a white cloud of smoke is left at a stoplight, but it does not smell, it's coolant.
