Is it possable to bore a 924S engine out to 2.8 liters???? If so would I have to get bigger pistons or just oversized rings???

No, it is probably not possible. That would require a pretty big bore. You'd have to bore your engine from 100mm to about 106mm. The 2.7l 944 and S2 have a 104mm bore. That is as far as I would go. The S2 has a longer stroke.

Any time you overbore an engine, you always need to replace the pistons.

Dave,

Yes it is possible... but you don't have to rebore the engine. All of the 2.5 liter engines can be re-stroked to 2.8 liters. I'm sure that some people here will know the details, but 2.8 liter stroker kits are available.
