Decided to bite the bullet and go with new Porsche dash for my 81 Turbo
But while things are out I remember someone posting the various items to restore , replace etc…can someone direct me ..or summarize from their experiences…

New heater blower motor? New foam to seal the HVAC ducts - it's degraded to powder by this point.
Maybe pressure test the cooling system and ensure your heater core isn't leaking; it's a massive PITA to get to with the dash and heater unit installed.
+1 to the LED bulbs, though those aren't horrible to replace without pulling the dash.
Perhaps remove and aggressively clean the carpet? Taking it out and pressure washing it gets an amazing amount of junk out, and it'll dry better of of the car. Possibly re-dye it too, if needed, while out. _________________ Vaughan Scott

Couple of thoughts:
Stretch. Certain procedures will require you to get your head up under the dash.
Lots of light. A flashlight or two with a magnetic base can be helpful.
Label wires as you unplug things
Careful with the side vents, the clips holding them in are brittle. Mine
broke; I used cable ties to keep the vents secured in the new dashboard.
Consider replacing white plastic ignition switch while you are in there. Inexpensive part.
Is your speedo/odometer working? Now is a good time to repair the speedo while everything is apart.
Clean the "ground tree"
Take pictures as you take things apart

Funny - I'm in the middle of doing exactly this, after replying earlier...
First answering the question: I got my dash through Columbus Porsche, I wanna say it was around $1600 shipped.
My "while I'm in there list... top of the list is dealing with corrosion left over from a leaking battery box (thanks to exploded battery acid). Lots of grinding and re-sealing, really nasty mess - hope I've got the worst of that behind me as of yesterday. Using a bunch of POR-15 to re-seal and protect.
I also had to weld up one broken driver's seat mount.
After that... haven't committed, but might still yet pop out the HVAC unit and see about a better blower fan - won't ever be easier. AC unit is out to address battery box issues, so it'd be wise to spend some time, make sure that's clean and happy.
I have a nice bit of carpet sourced from a junkyard car that was cosmetically nice - will be reassembling with that, along with some fresh wiring for the stereo... _________________ Vaughan Scott

I bought my (brown) dashboard from Werk924 in Germany

Since then, I understand that a new black (only) dashboard is available via Porsche dealers.

I think I paid just over $1100 from Porsche of Del. No tax either.
